To make one 6 inch pizza:
pizza dough
1 tbsp blended olive and canola oil
4 Tbsp Creme Fraiche sauce (equal parts of creme fraiche and heavy cream mixed thoroughly)
1/3 c Gruyère
1/3 c roasted beets julienned
1/4 c shitake mushrooms chopped
1 red Santa Barbara sea urchin (uni) (each urchin comes with 5 pieces!)


This pizza is best in a HOT wood fire oven, but a regular oven will will just take a litte longer. Crank you oven (or BBQ) to 550 degrees F.* While the oven is heating up, roll out the pizza dough from your favorite recipe. Make sure you use plenty of flour, and you can always use a wine bottle for the roller.
Brush the oil on the dough.
Spoon on the creme fraiche sauce and spread on the dough.
Add the gruyère, beets, mushrooms and uni as toppings.
Put the pizza in the oven until the dough is cooked and a little carmelized, and take it out of the oven.
Top with arugula and ENJOY!

*If you line the inside of your oven or BBQ with bricks, this helps the oven or BBQ to get hotter and keep the heat consistent.
